Summer time calls for light dishes that are easy and healthy like my strawberry goat cheese salad. It is perfect as a side salad or top it off with some grilled chicken for delicious fast lunch or dinner. Top it off with a low calorie champagne vinaigrette for the perfect meal.
I found my recipe for the Champagne Vinaigrette on the Epicurious website. The only ingredient I omit is the hot sauce. The heat can overpower the citrus bright flavor from the strawberries, which is really the feature flavor of the dish.
For a single meal size serving
- 2.5-3 cups mixed greens
- 8 strawberries cut in half
- 1/4 cup pistachio kernels
- 1 oz. goat cheese
- 3-4 oz grilled chicken breast
Top it off with some dressing and enjoy!
